Prior to the 19th century, most of Virginia's colonists were noble Englishman who had brought their highly stratified and extravagant cuisine to the new world. In fact, prior to the 19th century Virginia was the only place in the new world where haute cuisine was being practiced. During this time period, colonists frowned upon French cuisine mostly due to the rising tensions between England and France, most notably the French and Indian War. However, as the 19th century and the American Revolution starts, colonists turn towards French cuisine and focus on native animals and plants as their ties to England and the West Indies cease. The Chapman House will focus on this time period and bring traditional Virginia recipes back to life with a modern presentation.
